Open Night - Herbs - growing, identifying and cooking!
What a great night we had at our recent Open Night. The focus was herbs, growing, identifying and cooking with them. It was a pleasure to welcome 25 guests, including Councillor Mike Duncan.
We had fantastic informative presentations from members Lyndel and Robyn. Then member Dave Brett and his volunteers stole the show with his interactive cooking demonstration of pesto and herb meatballs - and they tasted delicious too! We had a large number of competition entries and enjoyed a delicious supper and social time to wrap up the evening.
Here is the recipe for the Pesto, if you'd like to try it yourself!
Leftover-Herb Pesto
1 clove garlic, chopped
1/4 cup nuts toasted
3 cups packed mixed tender-herb leaves, such as mint, basil, tarragon, coriander, and parsley
1/2 cup extra-virgin olive oil
about 1/4 cup cheese, grated
Coarse salt and freshly ground pepper
Directions
Pulse garlic, nuts, herbs, oil, and cheese in a food processor until finely chopped.
Season with salt and pepper.
